Chromatography is a preferred technology for large scale purification processes. It allows separation of the two components with a resin using affinity differences. On an industrial scale, it is applied consistently to achieve maximum efficiency.

In a continuous chromatographic separation process, the isoglucose syrup is separated into a fructose-rich (90% purity extract) and glucose-rich (raffinate) fraction. The raffinate is recycled to the isomerization process while the extract is blended with isoglycose syrup to achieve the desired content of 55% fructose.
